Collection of Low Carb Easter Dinner Recipes
In this collection of fantastic recipes, you will find several lean protein options, including fish, seafood, lamb, and beef. I’m offering several side dish options like eggs and carrots, of course — those are staples for Easter — but also beans, asparagus, and even a mashed potato alternative.
And for dessert, we have a variety of fruits, cakes, chocolate, a jello whip, and more. And yes, they are all low carb recipes! So dive right in and make your Easter celebration meal plan from these low carb Easter recipes.
Low Carb Easter Main Dishes
So let’s get started with the star dish of your Easter feast. The main dish is a great way to get some lean protein that helps to balance own blood glucose levels. So here you will find a couple fish options, some grilled scallops, roast beef, and lamb. They all provide such delicious flavors, you certainly can’t go wrong.
I didn’t include an Easter ham because I felt like that was obvious for Easter. Also, some hams can be pretty sugar-y with the glaze all over them. Just a note to watch that in case you go the ham route. You could also opt for pork chops or chicken breasts as well.
1. BAKED MAHI MAHI
Move over, traditional ham dinner. This baked Mahi Mahi is the new Easter dinner menu winner! With a light, buttery taste, this flaky white fish will satisfy your taste buds this spring.
This is a great lean protein choice for Easter, and it’s also low in carbs. Mahi Mahi is a great source of omega-3s and it’s also anti-inflammatory. So, squeeze on some citrus and eat up!

2. Easy Baked Salmon
I’m not sure if I like Mahi Mahi or salmon better. They are both really delicious. But this garlic, honey, butter sauce on this salmon recipe may be winning me over.
What a simple, no mess, no fuss dinner. It’s all wrapped up in foil, so it’s easy to clean up. And with only 3g carbs per serving, this is certainly a great low carb Easter dinner recipe option.

3. Roast Beef
As we move on from fish options, this roast beef looks absolutely delicious. What I love about this recipe is that you can create a super impressive main dish without too much fuss.
This Easter recipe is very versatile and would pair well with any of the side dishes below. But I’m pretty partial to a beef and mashed potatoes combo myself!

4. Slow Roasted Lamb Shoulder
Perhaps you’re looking for a great lamb option as a main dish for your low carb Easter dinner. This one would sure fit the bill. It’s a slow roasted recipe that gives you a mouth-watering, fall-off-the-bone star for your meal!
Another reason I like this recipe is that you cook this meat for a long time. So that means you can move on to other things, like the side dishes and desserts below.

5. Grilled Scallops
In case you’re wanting to fire up the grill for Easter, take a look at this grilled scallops recipe. I love the mild flavor of the scallops, and also their high protein content with relatively low calories. This is a definite for a low carb Easter dinner.
This recipe also comes with a grilling guide in case you’ve not grilled scallops before. Plus, there are different olive oil based marinades to choose from also. Talk about handy! (You can also grab an asparagus recipe below.)

Low Carb Easter Dinner Side Dishes
While main dishes are a great way to get in some protein, you can also get protein and some fiber from strategically selecting your side dishes.
In this collection of low carb Easter dinner side dishes, you will find some traditional deviled eggs and carrots. I’m also offering green beans with bacon, asparagus and mushrooms, and a mashed potato alternative. These are not only diabetic friendly, but great as keto Easter sides also. Other options might include Brussels sprouts or fresh salads. Which side dishes will you choose for your best Easter menu?
6. Classic Deviled Eggs
I wouldn’t have a complete list of meal ideas for Easter without deviled eggs — the kind of Easter eggs you can eat! My whole family absolutely loves them. Do you add pickle relish into yours? This recipe doesn’t include it, but you can throw some in if you want, before you fill the egg whites. I won’t tell!
Deviled eggs are one of my favorite things about this particular holiday season, but they are amazing all year around. And if you struggle to hard boil eggs and get a fully cooked yolk without it turning dark and being overcooked, check out the tips in this blog post.

7. Green Beans and Bacon
Here’s a great green bean casserole alternative: green beans with bacon. Because anything is better with crispy bacon, right? This green bean recipe is super simple and definitely low carb. So it’s the perfect addition to your low carb Easter dinner.
This is actually a great addition to any meal. Serve these green beans with ham, chicken, pork, or anything else you wish!

8. Parmesan Garlic Carrots
I absolutely LOVE roasted carrots. And when they’re tossed in a garlic butter sauce and parmesan cheese like in this recipe, I’m here for it. Especially with only 11 grams of net carbs per serving!
Carrots are a super healthy veggie. They are known to help with eye health, digestion, and heart health. They are packed with good vitamins and nutrients, so you can’t go wrong with these!

9. Mushrooms and Asparagus
In case you’re not a fan of mushrooms or asparagus, you can keep scrolling for more low carb Easter dinner ideas. But this side dish is too good not to include.
The chopped mushrooms and asparagus bakes together on one sheet pan, and then it all gets a splash of balsamic vinegar to top it all off. Talk about delicious!

10. Mashed Potatoes Cauliflower
You may not know these aren’t actually potatoes if you’re not the one making them. We love cauliflower as a substitute in our house. We use riced cauliflower in place of rice as a low-carb alternative also.
For this recipe, you only need a few basic ingredients. In about 15 minutes, you’ve got a keto friendly, diabetic friendly, delicious side dish that’s full of great vitamins and nutrients without all the carbs. This is a great choice in case you’re looking for comfort food with out the carbs.

Low Carb Easter Dinner Side Dishes
Dessert might be the trickiest part of your low carb Easter dinner planning. And that’s because desserts are typically pretty carb heavy. But there are ways around that because sometimes dessert is the best part of a holiday meal!
Below you will find a variety of low carb Easter dessert recipes. We have a sugar-free jello based recipe, cakes made with almond flour, cheesecake-filled strawberries, and more. Let me know which one you pick and also what you think of it!
11. Sugar Free Jello Mousse Cups
I love the idea behind these jello mousse cups. Whipped together with cream cheese, this is such a light and bright dessert. And just look at the colors. They would look so perfect on your Easter table!
You can make these with any flavor of jello you like, but these are lemon, lime, and cherry to get these colors. This is also a a keto diet recipe, and it’s gluten free for those avoiding gluten. There are only 5g of carbs in this recipe also!

12. Carrot Cake
What’s Easter without a carrot cake? Am I right? It seems to be the reigning champion of Easter desserts. Unfortunately, carrot cake can be super carb heavy. But this recipe only has 6g of carbs per slice. And there are also 6 grams of protein due to the nuts, so that’s an added bonus!
The difference? While there is a bit of added sugar in this recipe, it’s made with almond flour. That right there cuts down on the carbs quite a bit. Give it a try and see if it’s a hit for your family this Easter!

13. Cheesecake Stuffed Strawberries
I genuinely love cheesecake. And I also love strawberries. Put them both together? That sounds like a match made in heaven! The natural sweetness of the strawberries and the creaminess of the filling have my mouth watering already.
This particular recipe offers several ideas for fun toppings also. This fun Easter dessert has less than 5g carbs per serving (without toppings). So be sure to save room for dessert!

14. Texas Sheet Cake
For those who want a chocolate dessert, here’s a recipe for a low carb Texas sheet cake. This recipe was one I shared in my Valentine’s Day dessert ideas, and it’s worth repeating!
One slice has just over 200 calories and just under 6g of carbohydrates. (Not even 6 grams!) And look at that frosting. It looks like gooey fudgy brownies. How can you not enjoy this?

15. Strawberry Shortcake
This amazing strawberry shortcake recipe has an almond flour base. The recipe includes both the homemade sponge and homemade whipped cream so you can control the sugar. As directed, this only contains 8g carbs.
You could also make this recipe with raspberries or blueberries instead. Switch it up a bit!
