I’m a Certified Nutrition Coach who has been living with type 1 diabetes for more than 30 years. I am a graphic designer and writer who also dearly loves being in the kitchen.
In terms of diabetes, my A1c is consistently under 6.0, and it has been for several years. Now, that doesn’t mean my blood sugar is always perfect. A lot of this has been trial and error over the years (and some blood sugar numbers that don’t make much sense at all). But I’ll take a 6.0 A1c all day long!
So, I decided to create this book because I want to share my approach with you. I want to show you how you can still enjoy some of your very favorite foods. I want to encourage you in healthy, wholesome nutrition. And I want to empower you to live a long and healthy life—yes, even with diabetes.
While no one can promise you a certain A1c result, what I can do is share my science-backed approach that has worked for me for years.
